Came here for the first time today with my bf. He got the loaded baked potato and I got the combo with pulled pork. Food wasn’t too bad but wish it was hotter. The Butter didn’t even melt on the baked potato. Both of our food was semi cold. Our waitress was awesome tho.

I havent been here in a while and thought why not go again. It wasnt a good experience. I would not go again and I wouldnt suggest to anyone. The sausage was dry, the sliced brisket was dry.

Tried to go on a weekend. Stood by the door and were never greeted or acknowledged. An employee definitely saw us but kept pushing in chairs at empty tables and scrolling her phone. We left.
Who told yall to make that brisket burger THAT DAMN GOOD?!? I loved the fries too, people usually never fry em long enough for my liking but these were perfectly crispy! Will be back again for my next lunch break.

Our server, Taylor, was a delight. Polite, professional, helpful, and very attentive with a strong work ethic... maybe there's hope for Gen Z after all. 😉. Her parents can be proud.
As for food quality, I base my reviews of Texas BBQ restaurants primarily on the brisket (as God intended). The sliced brisket was tender enough, good flavor, although just a little dry... but I think I know why. There was no attached, rendered down fat cap. If this restaurant is smoking briskets without a fat side up fat cap layer, they should ask forgiveness from the gods of Texas BBQ. Otherwise, delicious sides, big portions, good experience.

Stopped here on the way back to Waxahachie and found a good meal. Unlike Rudy's, for example, where you get sliced brisket moist with lots of fat or not moist being very dry, the Ellis County BBQ sliced brisket was just right in my opinion. The sliced sausage and sliced brisket in the two meat plate seemed more than what you'd get at Dickies BBQ. The cole slaw was good, even though the mayonnaise base was runny. The potato salad was good but needed more potato, in my opinion. Service was very good, considering I was dining alone and all the tables around were full. Noise is not too loud, and that's a plus for me. Too bad there isn't an Ellis County BBQ in the county seat of Ellis County.

Took forever to get a drink then we finally received our food then about 3 minutes later received our appetizer. The whole time we were there a dog keep barking in the bar. And don't tell me it was a service dog because they are trained not to bark like there attacking someone unless there owner is in danger.
