Seriously, this food will change your life. Vegan or not…it’s just plain amazing! I’m transitioning to vegan after a life riddled with allergies and illness. This is one option in a food truck park with 5-6 other food trucks. El Mictlan was our choice for vegan/vegetarian. I had the Chilaquiles and my friend had the Tacos Dorados.
