These were some of the best street tacos I've had! I tried the fish (grilled tilapia), shrimp, carnitas, carne asada, and al pastor, and they were all outstanding, and the staff was really friendly and helpful. I hope to get back to PC soon just so I can eat here again!
They had a food truck posted at the Best Western in Coalville and it was DELICIOUS! The fruit in their recipes adds a refreshing take on Mexican food. I liked their El Gringo with al pastor and pineapple, plus their mango chile wings.
If I could leave a 10 ☆ review I would. Passing through and so happy we stopped!!! Asada and pastor were bith on point, not to mention the pickles veggies are to die for. I wish we lived closer. Thank you Rio Grande for probably the best tacos I've eaten in Utah!!!
