Absolutely phenomenal food! The restaurant itself is so charming, feels like you’re built right into the cliff. All the servers were so attentive and did not make us feel rushed at all. A lovely little place to eat when you’re feeling a little fancier. The amaretti cookies were the best I have ever had!
Gallus may be the best restaurant in the Waterbury/Stowe area right now.
There are a lot of excellent restaurants in this part of Vermont, but Gallus has become the place we find ourselves most excited to return to. The cooking is incredibly accomplished while the whole experience remains relaxed, low-key, and completely unpretentious — serious cooking without any ceremony telling you that serious cooking is occurring.

My wife and I were visiting Vermont from Colorado and Gallus was easily one of the best meals of our trip.
We didn’t have a reservation. A local told us we would probably need one, and when we checked online, they were booked for several days. We decided to take a chance and showed up about 15 minutes before they opened. We were the second couple in line and ended up with great seats at the bar.
