Buttermilk Pie, like vinegar and sugar pies, are part of a category called Depression Pies. They are made with whatever is in the cupboard! we do our version with chocolate. Eggs, buttermilk, sugar, vanilla extract, a touch of flour. Served with whip cream.
Paris, Texas Peach Cobbler for 2
Classic, no twists, this one is simple-served hot and delicious! Each one baked in cast iron. The batter is similar to the French pastry called a Financier-fluffy, crisp on the edges, and buttery.

The Brisket Deep Dive at the Algona location was incredible! Pit Master Joe is a total pro—in the two hour class he covered everything from trimming to how to season to finishing and serving. For $150, it's a great value since you get lunch, a Jack’s apron, dry rub, and BBQ sauce. It was a perfect birthday gift!

It was great chatting with the other attendees, and the lunch after the class was excellent. Highly recommend!

pulled pork was great. brisket had a nice crust but just salt and pepper leaves so much flavor potential out. wife had catfish that was cooked to perfection but also just either no seasoning in batter or not enough.
