Grew up going to Eddy's. Stopped in after 25+ years. Glad to report it's the exact blast of nostalgia I hoped it would be. Everything tasted exactly like I remembered, and it made me very happy.
1st off, I'm very picky about Chinese food and am very wary of places that advertise that they do Chinese & (fill in the blank). The places I loved in Seattle are long gone (China Village, Panda's, Yak's, etc) but they shaped my preferences and tastes. That said, living on this side (near Spokane), it's hard to find noodles that I appease me. Also, our situation was kind of unique and the staff/owner/family were accommodating to us. Eddy’s is a restaurant which is primarily Chinese with one page of American food. I believe it is the only Chinese restaurant in Colfax, but unfortunately it’s not as good as I had hoped. I was disappointed that the chop suey had very little in the way of fresh vegetables in it, and was predominantly, canned mushrooms and water chestnuts.
