I have gone to Gilson a few times, around 4 or 5 times although today was the best experience I have had here yet. We ordered the bossam and the half & half wings. I've been here 5 times now, but this most recent time has been my favorite experience so far. It was slow, then busy, and then very slow again. We ordered the Bossam and Cold Noodle Combo, but our server let us sub the korean wine for soju since we were craving Somaek. The food came out within 15 mins and it was delicious and consistent as ever. Our server/cashier Jason (I hope I'm spelling that right) was absolutely stellar. This is one of my most cherished Korean dining establishments. The cuisine is delectable, and the customer service is exceptional. Another remarkable aspect of this restaurant is its late-night operating hours. It comes highly recommended.
