Sol is my go-to restaurant in Everett. They are a Pan-Latin/Caribbean place, and make the best Mojitos anywhere outside of Cuban restaurants in Florida. The service can be a bit slow, but not because the servers are lagging--the kitchen is painstakingly careful to make each dish terrific. At Sol, you can go on a tour. Cuba? So I'll add another great review with one caveat. My son's Colorado was probably the best ever...meat was succulent & delicious. I ordered one of the selections marked 'best served spicy'...& it was the enchilada. Enormous so knew I would be taking food home. Adding sliced Jalapeño peppers on TOP of ANY dish does not make it spicy. Altho it was good I expected the spices to be included in the filling. Lots of menu options so will be back to try others but not one of the spicy...read full review
