A Churro Croffle Symphony: Delight for every Sense Stepping into the waffle shop was like entering a technicolor dream. Staff, their faces beaming from under bright pink and sunshine yellow hoodies emblazoned with the most adorable dachshund silhouettes, greeted me with a warmth that rivaled the aroma of buttery goodness wafting from the griddle. But the true star of the show was the churro croffle I ordered. The first bite was a revelation. Imagine a croissant, it's flaky layers, somehow magically, puffed and crisped, then kissed with a golden magic of a churro. The texture was a symphony: the shattering crunch of the exterior gave away to a yielding, pillowy interior, each bite, releasing a chorus of buttery whispers. As for the taste, it was a carnival for my tastebuds. The sweetness of the churro sugar danced a delightful tango with a subtle richness of the butter, leaving a lingering warmth that had me yearning for another bite. Sharing just one order was not enough, we ordered another--stuffed, so so stuffed. And the service? It was like having a waffle crafted by angels with exceptional patience. The staff, a wonderful tapestry of neurodivergent individuals took the time to understand exactly what I craved, their attentiveness a testament to the welcoming, inclusive atmosphere of the shop. In conclusion, this wasn't just a churro croffle, it was an experience. A delightful explosion of taste and texture, served with a generous, helping of warmth and inclusivity. If you're looking for a waffle that will tantalize your taste buds and leave you with a smile as wide as those wiener dog hoodies are adorable this is the place to be!

The bacon waffle was so damn good! First impression was WOW, this place was different, smelled pleasant, and it was interesting that there was a flower shop in the foreground lol I enjoyed the seating, it wasn't busy when we'd gone inside so we got a great spot to sit down and enjoy our waffle. The waffle itself was just crispy enough on the outside and doughy in the outside. Everyone likes it differently, but I think that's a good balance to enjoy. Not to mention the bacon mixed in the waffle was well cooked and evenly spread out. The bacon was also crispy and well cooked, and not burnt!!! We believe it was the owner, but she was very attentive and polite when she served our food. It was nice she took the time to answer some of my questions haha If the owner is reading this, my partner liked your hair color in the picture that was on the table lol

The waffle I had was so delicious! It was crispy on the outside and had that cakey texture on the inside that I liked. It was also topped with 2 pieces of bacon! If anyone is planning on going to Seattle, this is the spot to try!

It was 12 bucks for half a waffle. It was a perfectly acceptable waffle, but I figured I'd be getting at least a whole one.

The waffles were out of this world delicious and the coffee drinks were so fun (and there's nothing I love more than a fun coffee drink), but the vibes were just a bit off. My partner and I felt like we were annoying the employees by existing, which wasn't super pleasant and honestly I'm not sure I'd go back. :(

Came in around 930am on a Sunday and easily found a seat, by 10 it was packed and a 30+ min wait. Ordered at the counter and locked the classic waffle and the breakfast sandy with greens.The great: breakfast sandy was delicious! Well balanced, great flavors, hot and fresh. Space is cute with bright tables and I loved all the plants in the back. Staff was nice.The meh: the waffle was barely warm and soggy everywhere but the edges when it arrived. It seemed like it wasn’t cooked all the way through and that it was ready first and they let it sit while my sandwich was being made. I only ate about 1/4 of it. The flavored butter was not for me either, nor the maple syrup.I think they thought 2 people were eating the meal, otherwise they would have brought my waffle when it was fresh and hot.I’d come again for the breakfast sandwich and try variations of it. I wished the waffle had lived up to the hype but maybe this was an off day *shrug*

Fun place that's half waffle place, half plant shop. Takes awhile to get food but the staff is up front about it and the waffles were worth the wait.

Overall everything was good! The morning hamwich had such a light and crispy croffle. Loved the touch of mustard. Hashbrowns were crunchy and went great with hot sauce. I'll have to come back to try their sweet waffles. The matcha latte wasn't very good sadly, it didn't taste like high grade matcha. Otherwise, it's a really cute spot to dine in. Highly appreciated that they allow pups to come in and chill! Will definitely be back for more waffles, croffles and flowers!

Cute little restaurant in West Seattle with a flower shop in the back. I got the breakfast sandwich which was SO good plus the side of hash browns made in the waffle maker. Very friendly staff too.

Bebop waffle shop is an eccentric small little counter cafe that sells specialty waffles and croffles. We got here on a Saturday morning and it was super crowded. We were told the food would be a 45 minute wait, which was fine. We browsed the connected plant shop and chatted. We ordered the BOP smoothie, the rainbow madness waffle, and the classic waffle. For the BOP smoothie, they had run out of yogurt, so I had it replaced with honey. They ended up making extra, so we ended up with 2 cups of smoothie. Really delicious and fresh! The waffles were crispy on the outside, nice and fluffy on the inside. The fruity pebbles flavor is the best. The classic waffle was also super good. It comes with this delicious slab of cinnamon butter which is amazing. Overall, really good spot, would try to come during a less busier or time, or maybe order beforehand to avoid long waits. Otherwise, amazing!

What a fun brunch stop in West Seattle. If I lived closer, I would frequent here. This place is a cafe in the front and a flower shop in the back which makes for some epic decor. You order at the counter and they have some great options. We ordered the large mimosa for 4 people and we ended up getting like 6-8 glasses out of it. I also got a sparkling americano with a touch of almond milk. I had never heard of sparkling water in an americano but I don't think I want it any other way now. It was so tasty and I loved the slight carbonation. For my food, I ordered the monte cristo waffle sandwich and it did not disappoint. I'm still thinking about the ham, jam, mustard combo a week later. I'd order this everytime.
