I arrived right after they open with my luggage because I was starving from my long train ride in from Whitefish, MT. The server was super nice. He got me hot tea and banh cam to settle in with. I ordered bo bia (autumn rolls), vegan pho, and roasted pork banh mi (to go).

Chu Minh Tofu and Vegan Deli is a highly recommended restaurant in Seattle for a delicious vegan dining experience. The Vietnamese food is authentic and flavorful, with standout dishes including the Pho, Tofu Sandwich, Fresh Rolls, and Spicy Tofu Banh Mi. The bread is particularly noteworthy, described as some of the best and similar to the bread in the movie Ratatouille. The servers are kind and accommodating, providing free rolls when food takes longer to prepare. Although the location has its drawbacks, the food is said to make it worth the visit. The restaurant offers fully vegan options. Customers praise the food as very delicious and note that the staff are sweet and caring, often giving extra items like egg rolls and spring rolls for free. The Spicy Tofu Banh Mi is considered the best in the area, with crispy, warm bread and a sauce with a perfect balance of tang and spice. The dishes show incredible techniques to bring Vietnamese flavors to life using vegan ingredients, and the staff’s friendly service adds to the enjoyable experience. Visitors also appreciate that the restaurant seems to do great community work and plan to return to try the buffet soon.
