As a native Texan I fell in love with Jack's BBQ when he opened. There have been some swings and misses over the years but Jack's has for the most part refined things. I truly enjoy Jack's BBQ. I was eager to try Jackalope to get some Tex Mex. There were some high points and were some swings and misses here unfortunately. The chips and warm sass were tasty. Chile con queso was good and I actually prefer the queso at Jacks BBQ. He refined it to be spot on now at the BBQ restaurant. More refinement is needed here as I understand they are two separate recipes. Texas nachos are not a big pile of chips loaded with a big mess of toppings. Go to Applebees if you like that suburban bar food. The nachos at Jacks were spot on and I loved them. I'll be back for those! I was so excited about the cheese enchiladas with brisket chili gravy. The absolute Tex Mex staple at Jackalope was ok but lacked flavor and punch of cumin spiked Tex Mex enchilada gravy . Thinking I was in Texas I asked for onions in my enchiladas. They put in fajita grilled onions not the traditional diced raw onion to give texture and bite. The biggest disappointment was the rice. It was essentially Uncle Ben's instant rice that reminded me of my Texas elementary school cafeteria. For the price of the restaurant, real Spanish rice should be preserved which is fluffy, nutty and not gloppy. The dulce de leche cake was frigging amazing! We asked for lime-y not sweet margaritas and we were presented with great mezcal and tequila versions. I will be back and hope they make changes to up the ante!!!

Our dishes were all quite tasty, but I only offer 4 stars because I and another Texan were judging for authenticity. Super service. A little loud atmosphere for conversation but understandable being Saturday afternoon. Priced like Seattle.

Went to Jackalope on a wet Friday night. Was able to get a table for 2 with no wait at 7:30. The place was was lively but not obnoxious. Waitress was attentive and friendly. The whole menu looked delicious. The chips and salsa were great as were the stuffed mini peppers. I got the smoked carnitas and it was amazing. My wife got the brisket tacos and, wow. Some of the best tacos we've ever had. The churros and dulce de Leche cake were also delicious. Would definitely go again and highly recommend.

Had a great first time experience with our party of 5. Arrived about 5:00 to beat the rush as we had no reservation, (btw they do now accept reservations). Our waiter Paul was so nice, so helpful and especially knowledgeable regarding history of Jackalope and menu offerings. Paul really helped make our dinner a wonderful experience. We had the chicken fajitas, chicken was so delicious you could eat it by itself. Fish tacos were fresh & tasty and the brisket enchiladas and brisket tacos were tender and flavorful! In house made seasoned chips and chipotle style salsa were delicious. Tried the Ranch Water drink, amazing and low carb! Overall nothing negative to contribute. We will be back to try more of their amazing menu!

Great experience! We went on a Saturday evening with a reservation for 10. Columbia City is so cute when lit up at night. The restaurant interior is cool and we liked the big bar as well. We found the menu to be robust enough for everyone's taste. Our meals were warm, tasty and of generous portions. Churros were a fantastic way to end the meal! Pricing seemed spot on for what we received.

Felt like being back in west Texas from a food perspective. The enchiladas suizas are amazing and the warm salsa perfect on cool days.

Around Feb 1,2024 I ordered the fish tacos at 11:45 am so you’d think the fish would be cooked fresh. The manager mentioned they cook the fish fresh every morning so obviously they don’t cook it to order. When my plate arrived it looked lovely but when I bit into a taco there was just this little dried bit of fish inside. The other taco was the same. The manager who was waiting tables offered me something else but my appetite was gone.He did take my beverage off the bill but still for $20+ for two fish tacos I expect a lot more.He gave me a brunch coupon but I won’t be coming back.

Everything was five stars, the atmosphere was pretty much what I expected so hard to give five stars. Not overlooking the ocean or anything. Definitely clean and nice but the burrito was probably the best one I've had in my entire life. Braised beef.
