Azteca Mexican Restaurant in the Spokane Valley has the best Mexican food as far according to my family. We used to visit Azteca in north Spokane until they closed that location, so now we drive 30 minutes to the valley when we have a craving. Last time we ordered our food to go and it was wonderful. Very hot and delicious. They have some of the best refried beans and rice anywhere.
MIL likes it, so we went.
First, the complementary chips were mostly broken. Fine for chiliqueles, but not for salsa.
I ordered Chickel Mole... and the chicken breast was like *wood*. Tough, unappealing, with a mole sauce that tasted of salt (and not much else)
My wife had a chimichunga which was not deep-fried... it was grilled. In other words, she got a flour tortilla with some beef in it, warmed up on a grill.
However......

Probably could've taken a better picture but it was good and I was hungry. Seems like they've revamped the way they do things and the food was very good, flavorful and filling.
