This is my new favorite restaurant in Madison! The ambience was wonderful, bright colors, soft music, and impeccable service. The Lab Night concept is brilliant. Each new course was a fun new surprise. The chefs delighted us with each bite, from the melt in your mouth beef shank, the fresh garlic naan, and the elegantly elevated roasted carrots this meal was nothing short of amazing. I can't wait to go back!
This is our second time eating here-- first was for the full tasting menu, which was absolutely amazing, and this time for one of the lab nights. I really enjoyed going in and not knowing what was going to show up on our table, and everything that came out was interesting and good. There were a couple of diners that came in not realizing that Monday-Thursday was only the lab night menu, so I'd say make sure you know what you're walking into if you're going during the week, but it's a good value and fun if you're an adventurous eater that likes to be surprised.
Really excellent food. I wish there were a soup and/or salad as an option to add to meal. The braised beef shank was so great. Everyone at table loved it. ( but personally I wish one could order not spicy at all as I'm super sensitive to spicy foods) the "Chicken & waffle" was tasty, but again wished for me personally I could order not spicy. The Dal & rice dish with pumpkin/squash was good but drier than expected. Would have like more "gravy" that the description mentioned. Salmon was sooo good. Mild spice, but the yogurt sauce served with tempered the spice that was there. Salmon was served rare, so keep that in mind if you like more medium...Garlic Naan & dipping sauces were yummy! Loved these & could eat that all day! Our server was attentive & asked the chef questions when we had specific dietary needs met.
The service was outstanding. Very attentive but not pushy or rushing. He was very knowledgeable of the menu. The wine was expensive for the pout we received. The rabbit was DELICIOUS as was the beef dish. The vegetables were good but could have used some salt. The Daal was mostly rice (couldn't see or taste any lentils) with a few pieces of squash and turnip. The Naan is incredible...get the dipping sauce trio for certain. Overall this was a really good experience and I would highly recommend people try it. There aren't other restaurants in town with this upscale fare and it's well done.
Always an amazing experience at Sultan. Wonderful, flavorful food; kind, humorous staff. Sultan has always been a quiet, warm and welcoming space.
Our party of 6 had a fantastic experience at Sultan on a Saturday evening. The staff took great care of us as we explored the entire menu, including both naan and one of the desserts, and every dish was unique and delicious and enjoyed by everyone in our group. The wine list was great and the cocktails were innovative and tasty. Couldn't recommend this spot more!
Such a wonderful experience with fantastic flavors and creations. I commented to the waiter that it was one of the better curated wine list in the city, small though it was. Don't be intimidated by the “lab night” tasting menus...it was exquisite from start to finish.
Favorite spot in Madison, hands down. Great food that you won't find elsewhere in town, reasonably priced, and excellent service. Very few other spots of this caliber in the area. Will be back soon.
I’m a bit conflicted about this place. We went on a lab night, so we knew what to expect from that. The food was good. I wouldn’t say this is traditional. It seemed more like “these are the fresh ingredients we got from the farmer’s market” plus Pakistani spices and preparation methods. Sort of bordering on fusion. The $40 meal did not include any meat, which was definitely a letdown. Courses were a cucumber and red onion salad, sweet potato soup, vegetable curry, humus, naan, and a dessert. For 5 of us, we typically shared 3 plates (besides the soup—each person got their own). Again, we didn’t dislike any of the courses. They were all tasty. The cocktails were thoughtful, unique, and delicious. The naan was exceptional—some of the best I’ve ever had. I just didn’t feel like the value was there. There’s no tipping, and the menu prices reflect that. Let’s say 20% is baked into the price. That means this would typically be a meal priced at $33. Not worth it in my opinion. I still think people should give it a try

I loved everything about Sultan! It's definitely my new favorite restaurant in Madison! From the innovative and delicious food to the ambiance and service. A+ all around! I'll definitely be back.

I was able to attain a dinner reservation at Sultan’s last Sunday and the experience did not disappoint. The waitstaff were incredibly insightful explaining the menu and the flavor profiles.
The murgh chole I ordered was served perfectly as the blend of chana masala and chicken provided savory blends from the slow braised chicken and the perfectly cooked chick peas.
For dessert, I had the Shahi Tukray. The bread pudding was a cardamom brioche topped with pistachios, almonds, and golden raisins. The blend brought different flavor profiles with each bite making it incredibly enjoyable.
Overall, Sultan’s had everything I was looking for when attaining a dining experience. Madison is fortunate to have such a place that embodies what we strive for in restaurants.

We went to Sultan on a lab night. All great, flavorful dishes with the right amount of spice. A light cucumber and tomato salad followed by a large piece of naan type bread. Then a large lentil and potato dish (we took some home) followed by a pudding type dessert that is the perfect ending to a meal you find at Pakistani/Indian restaurants. $35 per person was a good price for the amount of food. Very attentive and friendly service. We'll be back.
