“Ok, so I’m one of those Mexicans who only barely resemble the rest of my family. I say this because while I look like a pasty-looking old white guy, I grew up eating what I called food - which others call Mexican food. True Mexican food is only vaguely related to mainstream USA based Mexican restaurant food that is better described as Tex-mex. Guadalajara restaurant is the closest I’ve ever come to what I grew up with, up til I found them in Colorado I was just serially disappointed in every Mexican food place that people recommended. If I were Gordon Ramsey I’d advise them to drastically trim the large variety of things they serve. I hope they never do, because occasionally I want to rediscover a taste of a dish I had 50 years ago and Guadalajara usually has it. Turns out that the Guadalajara restaurant is owned by the same folk that own the Colorado locations, it was like a miracle discovering this restaurant. There are a couple of things that I wish were different, but making real refried beans is something that takes 2-3 days, so their refried resemble the same stuff the others buy and use, but the non-refried beans are the real thing. Like meat? “molcajete” will stuff you silly. My childhood food was not bathed in what folks call ‘green chili’ - or it’s red version. most of their stuff won’t have much, if any, heat derived from chili pepper use, grandma and every one I knew had a small bowl of chili on the table, so you could heat up your palate as much as you desire - dousing things with hot sauce is a good way to cover up inferior ingredients or poor taste, you won’t need it here - but you can get it if you just ask. I moved from central California to Colorado, now I’ve retired to platte county - and Guadalajara was like a miracle. I’ve yet to send anything back, and I’m notorious with my family for doing so. Their kitchen knows food, I trust them - you should too.“
