Have you ever had a meal in which you just don't want it to end? The flavors enhanced one another. We had scallops served with a pork belly slowly roasted to perfection. Our bison burger was so tender, cooked med rare and the freshest beets, potatoes and carrots roasted . The carmel toffee dessert melted in your mouth. The service was spot on. a lovely meal to the end of a great vacation in Banff.

Everyone of the staff was so friendly and accommodating. The bartender recommended the bison trio for us and boy oh boy was he ever right. If you’re looking to try bison but unsure what to try, give this trio a try you won’t be disappointed. The bison was cooked to perfection. I would highly recommend the bison and this restaurant

The Bison Restaurant offers a delightful dining experience with its delicious food, excellent service, and impressive wine selection. Customers have praised the bison short ribs, halibut, and duck dishes, with many claiming the duck is better than dishes found in Michelin star restaurants. The bison tartare and escargot with brie have also been highlighted as amazing choices. The cozy ambiance, enhanced by live music on Thursdays, and the option to dine on the outdoor patio create a pleasant atmosphere for guests. The octopus starter is highly recommended, and the Canadian wine list is fantastic, with knowledgeable staff providing excellent wine pairings. Guests have enjoyed sharing several appetizers, including the venison steak, all of which were fantastic. While the food is excellent and beautifully plated, the team provides warm, attentive service, making guests feel special for celebrations. The spring 3-course special offers excellent value, and the tomahawk de bison is perfect for large eaters. Although the dessert menu is somewhat short and more conventional, the maple pie has received praise for being awesome, despite some critique about the crust. With a strong emphasis on local ingredients, The Bison remains a fantastic dining experience worth trying, especially for those with dietary restrictions, as the staff is accommodating. However, some guests have noted that the bench seating could be improved for comfort.
