Me & husband grabbed the Gumbo-rito ! Both with shrimp and one without sausage!!! Really tasty burritos !!

Hotroot is a cute little food truck park in Cooper Landing offering flavorful and creative food options, including for vegetarians and vegans. Menu items are gluten-free and dairy-free, with the Tom Kha being divine, generous in portion, and the Rainbow Wrap a perfect mix of flavors that feels healthy, refreshing, and filling. The Panang Curry is delicious with a perfect balance of veggies and chicken, and the Gumbo-rito is really tasty. A simple grilled cheese with tomato soup also tasted so good. The owner is super friendly and customer service-minded. This place is a must-stop, though note it’s a food truck with limited seating. Highly recommend.
