The catfish poboy was perfectly cooked, but light on seasoning. The blackened grouper poboy had just the right amount of spice. The creole okra was to die for. Our server, Destiny, was great.

Cajun Roux Bar & Grill Huntsville is a Cajun place in Providence. The catfish poboy was perfectly cooked, but light on seasoning. The blackened grouper poboy had just the right amount of spice, and the creole okra was to die for. The blackened fish tacos were great, and the slaw on them was wonderful. The Blackened Gator bites had good flavor, and the Seafood Risotto was very tasty with a large portion. The blackened Mahi Mahi, smoked gouda grits, and an extra side of hush puppies were amazing. The fried pickles and the creole cajun oysters were delicious. The atmosphere is easy and great for spending a night with your mate, watching football and talking. The servers are cordial and professional, and the table service was great. However, the workers were very cold on a take out visit, and the bar tenders were rude. Parking can be hard, with on the street parking needed. The menu is fairly large with lots to choose from.
