PJ's Coffee is a hidden gem under a parking garage in downtown Huntsville, offering fresh beignets that are fluffy powdered sugar donuts from Louisiana. Their catering service, as experienced by a customer, provides delicious breakfast sandwiches, croissants, egg bites, and beignets. The spinach & feta croissant and bacon cheese egg bites were particularly enjoyable. While the Holmes Avenue location might be a bit tricky to find, the convenience of staying dry on a rainy day while picking up an order was appreciated. Despite some service issues and a slightly high price for drinks, the white chocolate latte was highly recommended. With a variety of coffee choices and a cozy atmosphere, PJ's Coffee is worth a visit.
