“Edited to update: Tried it again hoping they had improved. I was pleasantly surprised that the brisket was pull apart tender, cut in proper thinner slices (not the 1 inch tough chunks like last time). The brisket had great bark and smoke flavor. I hope it stays this way so we can start going here regularly again. Thanks!

Rudy's used to be our favorite place but the last three times we've eaten there it has been terrible. They are not cooking the Brisket properly any longer and it is inedible.
We go there for the brisket sandwich and the brisket is undercooked, flavorless, no bark, and as tough as shoe leather. We couldn't even bite through the brisket and it was like chewing rubber bands. You should be able to easily pull brisket apart but you actually can't pull this apart at all...requires a knife to saw through it. The last three visits have been the exact same and we've had to throw our dinner out.
Don't know how the other meats are as we go there for the brisket and green chili stew. We won't be back until they fire the pitmaster and get someone that knows how to cook brisket.“
