Good was not your typical Mexican cuisine but it had decent flavor nonetheless! Salsa was amazing and customer service was top tier!
We had a wonderful experience with a party of 8 without a reservation! The wait staff was polite and knowledgeable of the menu. The drinks were delicious and the Birria was a wonderful choice!

Copal Contemporary Mexican Cuisine offers a lively and colorful atmosphere with a menu that brings everyone together. The restaurant provides both a traditional Mexican menu and a dedicated vegan menu, with multiple choices and clearly marked items that can be made vegan. The service is outstanding, with staff who are polite, friendly, and knowledgeable about the menu.
The food is exceptional across the board. The Birria is a wonderful choice, and the Pastel Azteca Fire is absolutely delicious—packed with flavor, perfectly cooked, and every bite is worth it. The salmon with chocolate is an interesting journey of flavors. The corn ribs are excellent, served with a tasty vegan aioli, and the jackfruit enchiladas are solid. The Cauliflower Dish and Elote Ribs are both absolutely incredible—creative, flavorful, and beautifully prepared. The taco gobernador has the most flavor, and the pork belly taco is nice and crisp. The chips taste house-made, and the drinks are delicious.
The atmosphere is lively and colorful, with an eclectic vibe. The portions are generous, and the presentation is on point. Copal is a rare find that thoughtfully caters to both traditional and plant-based diners, making it well worth a visit. Highly recommended—guests will not be disappointed.
