What is Amazake? Amazake is a traditional Japanese health beverage made by fermenting rice with Koji rice. Koji rice is cooked rice that has been inoculated with Aspergillus, the bacteria culture responsible for soy sauce, miso paste, sake and other Japanese culinary favourites.

Shio Koji
What is Shio Koji? Shio koji is a mild, salty and florally sweet fermented rice seasoning made of rice, salt, and koji that is used as marinade to enhance flavours in food. The "noble mold" aspergillus oryzae, a culinary bacteria used to create soy sauce, miso paste, sake and other popular essentials of Japanese cuisine, is colonized with cooked rice, and that makes koji rice. Koji rice is then carefully fermented with salt and rice, creating a white, lumpy, flavour enhancing paste, Shio Koji, that can be smeared across slabs of meat to make it tender and juicy and on fish to firm up its texture. How to use it? Shio Koji can be used simply instead of salt, or as a marinade. It can be blended and it can be diluted. It can be used at the beginning of cooking or as a seasoning. It is edible raw in salad dressings for example and its enzymatic processes work on food before cooking.

It was my first time at the place, I must admit a new favorite place, although the space is small the place is nice, the service is excellent, very friendly and also helped me to be able to choose the dish well, the food was delicious, I wanted to try more dishes, of course I will come back and try the other dishes. I added one karage chicken $1.50. And I got a nugget. One NUGGET. that’s it. I can’t believe it.

Box of deep fried pork chop curry rice( less rice order)… One NUGGET.
and microwave heated Taiyaki for $20…

I guess I shouldn’t complain these days. It tastes good but that will be my ONLY attempt.
