If I could give AH Carbon 20 stars, I would. This is hands down the BEST taco truck in Fresno, and honestly one of the best places to eat anywhere.
The meat is absolutely incredible—perfectly seasoned, cooked to perfection, juicy, flavorful, and packed with authentic taste in every bite. You can tell they take pride in what they serve. Every taco is a masterpiece.

The truck, located on Parkway and Ashlan, provides a lively atmosphere with tables, a tent, and great music for a fun vibe. Their fresh ingredients, flavorful salsa, and must-try burritos and quesabirria make every bite satisfying. The owner comes out to greet customers, which is always a good sign. Customers enjoy the carne asada, Buche, and Al Pastor tacos, as well as the Vampiro tacos with a layer of grilled cheese and beans, asada, cabbage, onions, and cilantro. The owner is generous, offering samples of the meat and providing complimentary tacos. Excellent customer service and fast, friendly staff add to the experience. Prices are great, totally worth the stop—just arrive early to try the popular carnitas and buche before they run out!
