Gish Bac is a cozy restaurant that offers delicious Oaxacan cuisine, including Barbacoa (Goat and Lamb) and various Mole dishes. The portions are generous, and the food is described as authentic and flavorful, with the Mole Negro being a standout. The restaurant is a small spot in Arlington Heights, playing ranchera music and serving great Oaxacan dishes. Visitors often enjoy hearty, nourishing meals, especially on cold nights, with dishes like Plato de Barbacoa, which can be made with goat or lamb. The goat is marinated in red sauce before being slowly barbecued for many hours, resulting in juicy meat that can be easily pulled off the bones. The plate includes large blandita (corn tortilla) pieces, which are dipped in juices and consommé, along with a cabbage cilantro salad and lime juice for extra flavor. Black beans and rice accompany the meal. The green salsa adds a crisp, citrusy note. For drinks, the thick hot chocolate beverage called Champurrado, made with masa, cinnamon, and spices, is highly recommended. Parking is easy to find on the street, and the narrow dining room has booths and small tables. Overall, the atmosphere is friendly, and many find the food addictive, especially the mole, which is considered one of the best they’ve had. The service can be friendly but sometimes less than average.
