My husband and I celebrated our wedding anniversary this past Friday evening with dinner at The Brinkerhoff.
We arrived a little early for our reservation, so we stopped next door at Bar Hummingbird for a drink beforehand. From the moment we walked in, we were greeted warmly by the two hostesses, who were friendly, welcoming, and seated us right away. Just an amazing dining experience! 5 stars alllll the way!
Food, drink, ambience.. all amazing. Barrel aged margarita is unmatched. The best patio dining experience I have found in the Denver area, it was beautiful. Forgot to take a picture of the truffle fries and carrot cake but it’s all incredible. Can’t wait to return.

The Brinkerhoff in Castle Rock offers a premium dining experience. Guests describe the food, drink, and ambience as amazing. The pimento cheese dip with honey, coconut sushi roll with tuna and salmon, wood-grilled salmon, and prime rib French dip are all excellent. The truffle fries and carrot cake are incredible. The atmosphere is gorgeous, with beautiful lighting, colors, and decor, making it an excellent spot for a date night or special occasion. The service is exceptional, with servers who are friendly, attentive, and professional. They are knowledgeable about the menu and provide excellent recommendations without making guests feel rushed. The staff works as a team, and the service stands out. The seafood is flown in fresh, and everything is made fresh daily. The presentation of every dish is beautiful. This is a fine dining restaurant that provides a fun, special, and memorable experience. It is highly recommended for a decadent night out.
