Moist Brisket
Moist brisket is seasoned with our Rudy's Rub and smoked slow overnight. Moist is marbled with fat.
Rudy's Chopped
Chopped up Brisket cooked with our Rudy's Original Bar-B-Q "Sause."
Pork Ribs
About 4-6 Ribs per pound. Also known as spare ribs, which will have a little marbling on them. They are seasoned with Rudy's Rub and smoked for approximately 1½ hours.
Baby Back Ribs
About 6-8 Ribs per pound. Small and very lean pork ribs, seasoned with Rudy's Rub and smoked for approximately 1 hour.
Pork Loin
Same cut as pork chops, but without the bone. Seasoned with Rudy's Rub and smoked for approximately 1½ hours. Served thinly sliced.
1/2 lb Pulled Pork
Shredded pork that has been smoked and mixed with our tangy Mustard Au Jus sauce.
Turkey
Turkey Breast is rubbed with salad dressing, seasoned with a rosemary sage spice and smoked for approximately 1½ hours.
Half Chicken
A 3 pound chicken, rubbed with salad dressing and seasoned with Rudy's Rub which is then smoked for approximately 1½ hours. Served on the bone with each half cut into four pieces.
Whole Regular Sausage
A whole German sausage link consisting of half beef and half pork. A whole sausage is cut into 4 pieces and weighs about half a pound.
Half Regular Sausage
Half of our German sausage link consisting of half beef and half pork. A half sausage is cut into 2 pieces and weighs about a quarter pound.
Whole Jalapeño Sausage

Corn on the Cob
Grade A corn on the cob, served with or without melted butter.

Green Chile Stew

The line says it all. Don't let it discourage you. They're dishing out moist BBQ brisket, turkey, chicken and sausage. Ruby's beans are great! I fed six hungry mouths for six Jackson's, not including the tip. I encourage the tip! Fast friendly service and the atmosphere is quaint, with red checker board table coverings and a wholesome decor. They have soda fountain drinks or bottled sodas/pop sweetened with cane sugar. Bottled alcohol beverages are also available.

Absolutely BEST MEAT IN TOWN! highly recommend RUDY'S their the best I haven't had their food in years and today they blown my mind and taste buds again just amazingly delicious!

Took the kiddos for some BBQ. This place is decent and probably the best BBQ in Colorado, but it definitely ain't Texas BBQ. Sadly, they cut the bark off the brisket and heavily trimmed the marbling. It would be much better if someone taught them how to properly smoke and cut the brisket.
