The management doesn't hire servers, even with 8+ years of experience at more high-end restaurants. They say that they want new employees to learn the menu and culture first, but it's really to mold new employees into the routine of exploitation. Shifts are so short (routinely cut after only 2 hours due to "volume of business") and some shifts cut in entirety.
