Walter Brewing is a true gem in Pueblo. The beer is absolutely fantastic — crisp, flavorful, and brewed with real passion. While I was there, I had my first slopper, a Pueblo must-try, and it did not disappoint!

A huge shoutout to Rosie and Jessica behind the bar — not only were they friendly and welcoming, but they also gave me the inside scoop on where to buy authentic Pueblo green chile peppers and even walked me through how to make chili. That kind of local hospitality made the visit even more memorable.

“We had Dylan as our server and let me tell ya, you can’t find a better server this side of the Mississippi! Dylan is thoughtful and caring as a mama bear. He really sets the tone for sparks to fly in this restaurant, almost like a modern day Cupid, if you will. If you’re lucky, you will be blinded by his silver chain, really bringing fashion back to restaurants. I bet all my money this guy will be running this restaurant by the end of the year.“

“Fantastic location on the Riverwalk with this converted jailhouse, delicious food served quickly,awesome atmosphere, and great service . We ordered the Soft pretzels with cheese and spicy mustard, lollipop chicken drumsticks, chips and salsa, salmon, all-American burger, and the very unique and delicious Pueblo Slopper! There were additional items that we ordered which I don’t remember, but the others in our party of 6 enjoyed every single item. Our server was awesome! Attentive, friendly, and efficient! Highly recommended!
