We went for Christmas Dinner, and web searches advertised a detailed buffet so we made reservations. However, there were only 3 main dishes offered (NY Strip, or Seabass, or stuffed squash). Found out after that the per person price did not include a dessert which was disappointing. Total cost for dinner and desserts for 5 was around $460. Our steaks seemed to be of poor cuts as the four different NY strips were all hard to cut and chew; very subpar for the price. The seabass was excellent, and so was the lobster bisque. The winter salad was good. Green beans were room temp to cold and needed butter, but scalloped potatoe blossom had a nice crust. Service was great and attentively consistent throughout the night. Overall 3 stars.

Gessners is the one of most unrated restaurants in the vail valley- always delicious - always fresh. Last night was their Christmas Pre-fixe. A little skimpy for $80 pp but was excellent either way. The restaurants a bit dated but dont let that stop you - go and enjoy

Santa breakfast description did not match what was provided. Did not have a prime rib carving station or “raw bar”. Kid did enjoy the hot chocolate station with toppings. Complimentary mimosas were nice. Did not have a server, had to bring our dirty plates to a tray off to the side. Room was really well decorated.

Ate breakfast a few times at the Gessner Grill during my stay at the Grand Hyatt. I can only speak to the breakfast, but everything my spouse and I got during our stay was great. The potatoes were very well seasoned and notable and the French toast was fluffy and just the right amount of sweet. Service was excellent!

We’ve been dining at Gessner at the Grand Hyatt Vail for breakfast, lunch, and dinner during our stay, and every single experience has been outstanding. The food has been consistently fresh, well-executed, and thoughtfully presented across all meals — which is rare and impressive.

Service is attentive without being overbearing, and the overall atmosphere feels relaxed yet refined. Whether it’s a casual breakfast or a full sit-down dinner, the quality never slips.

After a few disappointing dining experiences elsewhere in Vail, Gessner has been a breath of fresh air. Reliable, high-quality, and genuinely enjoyable every time. Highly recommended.

The ambience was good and the staff was nice but it seemed like they were struggling. The quality of the food wasn't worth the price especially the prime rib. The meat was like rubber band.

Me and my family visited Gessner last weekend for dinner while staying at Grand Hyatt. The ambiance is really nice, very classy with those mountain views, but the food was a bit hit and miss :(

We ordered the chicken breast, which I was really looking forward to. The meat quality was good, no doubt, but it was lacking that punch of flavor. it felt a bit bland, like they forgot to add something.

My wife got the pesto pasta, which was better, but still too dry for our liking. It had good flavor, but needed more sauce to make it perfect.

Service was excellent.

The presentation of dishes was nice, though, and the place is super clean and fancy.

Overall, it was above average.

We've been to this place severeal times during our stay at the Hyatt—for lunch, dinner, and drinks—and every visit has been a great experience! The service is consistently friendly, welcoming, and attentive.
We've tried several dishes, including the grilled chicken breast, chicken wings, bison chili, and beet salad—and everything was full of flavor and cooked perfectly.
The real standout, though, has to be their signature cocktails—each one we’ve tried has been expertly crafted and absolutely delicious. You can tell they put care into both the food and drink menus.
Highly recommend if you're looking for a spot with great food, excellent drinks, and a relaxed, welcoming vibe!
