Had a wonderful experience at Yoshimi Pop-Up. This restaurant is located within the Grand Hyatt at Vail. The sushi was fresh, and the service was excellent. We absolutely loved the oysters and would definitely go back!

Had a low expectation when walked in after reading all the negative reviews on here. But actually to my surprise, food was pretty decent. Miso soup however, was super salty, even after I asked our waitress to make it less salty… I don’t think their sushi is as low quality as market grade as some reviews say. They have a small menu though..

We had a great dinner. The special appetizer of oysters were delicious. The rolls were excellent. I had tuna sashimi and enjoyed it. If you're staying on-site at the Grand Hyatt it's excellent to have a sushi option.

Blindly agreed to go this restaurant, and oh boy I regret it now.Unfortunately, everything we had was mediocre (poke? - Joke, cucumber & sesame seeds? - terrible, rainbow roll? - unacceptable, edamame - the only edible item).I didn't even want to talk to a manager in order to improve our dinner experience, we just quietly paid our bill and left immediately.Can't comprehend how is this restaurant can be on premises of Grand Hyatt...

Supermarket grade Sushi at best. Avoid it.

This pop up lacks ambiance and the food was very ordinary. The sushi was something you could find in a supermarket. Small portions of fish and rice was wet and over cooked. I would give this a big miss

They do not answer their phones. Claim they required 3 day prior to reservation to cancel. If not it’s $50 a person cancellation fee! Will never dine here

Lack of various dishes and drinks, average raw materials, understaffed. There was a whole table of guests in robes, very inappropriate. The waiter and the host were very attentive.

Thought as a pop up there would be something special. Sushi rolls you could find anywhere. Nothing special at all. Price was right but that was it. Located in the bar area of the Hyatt. Joy sushi is definitely a better choice.

We were a little confused as where to go when we first got to the hotel and even within the restaurant. It was very loud and hard to hear. The sushi itself was really good. A little expensive considering the rolls weren't anything too fancy. I got the seaweed salad and it was the best I've ever had. The miso soup was also great

Explored a relatively new sushi outlet in Vail. Limited menu and quality was decent but not outstanding. Our server was friendly and knowledgeable about the sushi rolls and ingredients. For the value it was reasonably priced for Vail.

Sushi menu was limited ie no main protein courses. The fish was very fresh and beautifully prepared. My only critique is the size of sushi pieces. For a lady they were just too big. The sashimi pieces were only two pieces but cut very thick. Maybe this is an American thing but in Japan they are much smaller and easier to eat. It was not busy and service was polite and efficient. Interior could do with some plants or Japanese style screens as it's a big space that is quite dark and sparsely furnished. I'd give it a 4/5.
