“Old Colorado Brewery is hands down the best little brewery in the area . They are very pet friendly and have the best golden retriever named potato that is a fixture and loves to greet everyone ! He always lets you give him belly rubs and will keep your 2 legged and 4 legged critters entertained . Brandon and Tara are the owners and always have the best brews on tap . Come on down to the place where everyone will eventually know your name !“
“This is my favorite spot in Fort Collins. The beer is fantastic but the staff is what makes this place unbeatable. No matter the day, I’m always sure I’ll get a great drink and even better conversation. Truly cannot say enough good things about Hello Brew. If you like beer, you’ll like it here“
“Visting from Iowa. Very Freindly and Helpful. It's a must visit while in Fort Collins“

“The dunkel was good. The root beer was tasty too.“
“The water in the bathroom faucet is so soft. Idk how else to describe it. It feels like the air dryer blowing on hands, its so nice ive never felt any water like it. Very comfortable go wash your hands there, buy some wine or a beer as well“
“Great experience at this restaurant. The food was delicious and the espresso martini was even better. Enjoyed the patio! Our server did an excellent job making sure our food & drinks were perfect. Drove from Cheyenne, Wy for brunch . We will definitely be back!“
“We're driving through Fort Collins and looking for a place to sit outside with our dogs and have a beer. Downtown was crazy and no parking. On the way back to the hotel we ran across Peculiar. Plenty of parking, great beer selection and the food truck, outside, was great! I recommend the Cuban fries but all sound good. If you want a great place and still be able to park and not wait long for a table, this is the place. Beer is great. Bar tender is hot. Just an added bonus.“
“Good times always, either hanging out with friends or just going with the kids to eat from the food trucks & chill out.“
“Great beers in a great location.“
“Great wait staff behind the bar! Great place to meet friends and have a brew. I would suggest cleaning the tables between patrons and being mindful of tp in the toilets.“
“I'm so excited to hear that they have the Gordon Creek Band coming this Saturday, November 2nd from 4 to 6. That band rocks and with some fabulous beer and food, it's sure to be a great day.“

“Fort Collins, CO
There are restaurants that serve food, and then there are restaurants that serve identity pieces of history folded into plates, poured into glasses, and anchored deep into the culture of the place they stand in.
Penrose Taphouse & Eatery belongs firmly in the second category.
Named after Spencer Penrose, the entrepreneur, the risk-taker, the firestarter of Colorado’s early identity, this establishment doesn’t just borrow a name it honors a legacy. The man who carved a road up Pikes Peak, sparked industries, created jobs, and literally shaped the terrain of the state… that spirit is alive here. You feel it the moment you step inside.
There’s a quiet electricity in the room a sense that this place was built on the backbone of ambition, of people who weren’t afraid to roll the dice. The atmosphere is warm, grounded, and unpretentious.
A chill vibe with a pulse.
And then comes the service led, on this visit, by Ella.
Ella is one of those rare servers who doesn’t just take orders; she commands the experience. Her pace? Fast, efficient. Her precision? Sharp. Her hospitality? Effortless. There’s a grace to the way she moves, a confidence that says she knows the room, she knows the food, and she knows exactly how to make you feel taken care of.
The kind of service that makes you stop and think,
“Damn… this is how it’s supposed to be.”
Now, let’s talk about the food because Penrose doesn’t play safe.
⭐ The Goat Burger
This isn’t just a burger; this is a statement.
Cooked to peak complexity layers of richness, savor, and depth stacked neatly between buns that actually hold their integrity. It’s bold without being obnoxious, refined without losing that satisfying punch that a great burger should have.
The old fashion was absolutely Perfect! Created eitj craftsmanship and precision.
A dish Spencer Penrose himself would’ve respected daring, different, unapologetically flavorful.
⭐ The Nachos
Divine.
A chaotic masterpiece that still somehow keeps its composure.
Crisp chips, generous toppings, balanced heat, and enough cleverness in the build to keep you going back for “just one more bite” until you realize the plate is gone.
This kitchen knows exactly what it’s doing.
Penrose Taphouse & Eatery is more than a spot to grab a bite — it’s a celebration of the pioneering energy that built Colorado. A relaxed environment where you can sit back, take in the history hanging invisibly in the air, and enjoy food crafted with skill and pride.
If you want:
a chill vibe,
amazing food,
service that hits every mark,
and a place that honors the spirit of a Colorado legend…
Penrose is your place.
A gem with roots, muscle, and heart.
