Based on the reviews, Maui Shrimp Express is a food truck in a super cute little truck food court. The Thai basil shrimp over rice is incredible with a perfect balance of sweet, salty, and basil. The large Thai shrimp is delicious, and the Sweet Chili Mango plate is a personal favorite, especially the rice. The Cajun shrimp are great, and the Honey Walnut Lemon Rosemary plate and Ginger Pineapple Teriyaki Shrimp plate are also mentioned. Service is great, quick, and orders arrive fresh. The staff is extremely kind; one person noticed a crying child and gave them chicken and fries for free. The local pineapple and local raw ginger are highlights. No complaints, though some wish the food could be spicier. This spot holds up to a favorite place on Oahu.
