I was looking for a vegan gluten-free lunch at the airport. I got a make-your-own salad with baby greens lettuce, cucumber, tofu, tomatoes, corn, peanuts, avocado, onions, carrots, cilantro, and a vinaigrette dressing. They didn’t have any tofu today, and the dressing could have been a little more flavorful, but I’m thankful to find a safe food option here at the airport.
