Xochimilco has undergone a complete transformation. What was already great before is now fantastic.
The atmosphere is gorgeous—upscale yet cozy, the menu is full of solid staples, like cauliflower steak and chicken boursin, and the service is spectacular.
I walked in today expecting to get a burrito and ended up with a cauliflower steak that was so much better. I'm blown away by how much has changed since my last visit, and I hope for Xochimilco's continued success.

I stopped by X’O Xochimilco Mexican Restaurant & Bar in the evening to grab takeout, and I was so impressed with the experience! From the moment I walked in, I noticed all the fun, colorful decor that gives the place so much personality. The staff was incredibly friendly and welcoming, and they offered me a seat while I waited for my food. We accidentally stumbled into their soft opening, and it did not disappoint! The food was excellent, and the atmosphere was great. I ordered the shrimp entrée with rice and beans, and my husband had the steak. Both were absolutely delicious and packed with flavor! We ended the night with fresh churros, which were the perfect way to finish the meal.

(X’O) Xochimilco Mexican Restaurant & Bar in Fitchburg is a gem that has undergone a complete transformation. The atmosphere is gorgeous—upscale yet cozy and very Instagram-able, with vibrant green and gold accents throughout, including gold silverware and golden lion accents. The fun, colorful decor gives the place so much personality, and the seating looks super comfortable, with a really nice outdoor seating area and a decent-sized parking lot. The staff is incredibly friendly, welcoming, and attentive, and the service is spectacular. The menu is full of solid staples and upscale Latin cuisine. The handmade guacamole is so fresh and bright, and the house-made hot sauce is insanely tasty, super fresh, and packed just the right kind of punch. The fish tacos and chicken tacos are genuinely great and super tender, seasoned just right, and wrapped in corn tortillas. The shrimp entrée with rice and beans, the steak, the Pork Dorado, and the Carne Asada are all absolutely delicious and packed with flavor. The lemon chicken is the best lemon chicken, served with fresh vegetables. The cauliflower steak and chicken boursin are solid staples. A savory goat cheese and fig crostini is an absolute masterpiece. Fresh churros are the perfect way to finish the meal, and a complimentary dessert is such a nice touch. There are kid friendly options that kids actually like. It is so nice to finally have a place in Fitchburg where you can get a great meal after 9 PM.
