What some reviews don't seem to understand is that this restaurant is basically a one or two person operation: a chef and sometimes a waitress. This means that when things are busy everyone has their hands full and patience is mandatory. What you get in exchange is food prepared by one of the best chefs in town, not some line cook. Chef Craig’s sushi is perhaps the best we’ve ever had - including many top restaurants around the country. The seared Tuna was off the charts, melt in your mouth with a Lime/Soy sauce. The Sesame Salmon was the best, freshest salmon I’ve ever experienced - Including Copper River Salmon in the Pacific NW. Fusion 1 Cafe has a special, laid-back, chill vibe. Be sure to make a reservation ahead of time! This was beyond incredible!!!
