Genuinely so good. The dishes impressively manage to maintain balance between a ton of different and saturated flavors. The chefs do an especially good job of balancing acid and fat. The highlight for me was the beets - I'd never have expected the flavor combination of pickled beets, prosciutto, egg yolk, and horseradish to work so well - you can really make out each individual ingredient and somehow it just makes sense on the tongue.
