We enjoyed breakfast yesterday and wanted to give a big shout out to Rae!! She was super cool, and she did a great job on a busy Saturday morning!
I stopped in for breakfast this past Saturday, May 18 and was so impressed with my server Nikki and the terrific Popeye omelet and cherry pancakes, I came back Sunday morning May 19 and had an equally terrific experience, courtesy of Rae, who served me an equally tasty Albuquerque omelet.

Located in TC, Flap Jack Shack is a world class breakfast restaurant that reminds diners of old fashioned home town diners. The food is excellent, delicious, and very reasonable in price with great portions. Meals like the French toast banana bread, stuffed hash brown, waffles with side of chicken sausage, and pancakes with side of hash browns are all delicious. The atmosphere is very mom and pop, clean, and homey. Service is great; staff is attentive, friendly, and kind. They are understanding and accommodating, even for special needs like celiac or autism. A big party of about 50 people found the staff and service met their needs for a great time. The host was very nice, offering seating options, and the server was attentive but not overbearing. Coffee is good and strong. Most breakfast dishes come with the option of toast or flap jacks. This restaurant is highly recommended, with guests visiting every week and stopping every time in TC.
