Chimborazo is a cozy, colorfully decorated restaurant with a warm and inviting vibe, offering unique and delicious dishes. The restaurant is open only for breakfast on weekends, and the friendly staff provide excellent service. The menu features a variety of options, including the popular Saltado with steak or beef, which is highly recommended. This dish is served with plantains and a hidden surprise in the form of a flavorful tomato. Customers have also enjoyed the lomo saltado, highlighting the tender beef and great flavor. Additionally, the restaurant offers vegetarian options, including a vegetarian version of the Saltado, as well as favorites like llapingachos and muchin de yucca. The seasonal outdoor seating is praised, and the servers are friendly and professional. For dessert, the chocolate peanut butter cake and Tres Leches are light and perfect treats. Many guests appreciated the flavors, from subtly savory to tangy and refreshing, and look forward to returning to try dishes like cheesy potatoes with chorizo. While some reviews mentioned disappointment with portion sizes, especially for the Emconcado with shrimp, the overall experience remains positive. Chimborazo is a popular choice for brunch, with a clean and comfortable atmosphere, and often busy with happy diners.
