“I don’t usually do this…BUT…wifey Kim and I tried the restaurant, Thai On Canyon (Road) and I just want to tell EVERYONE in Santa Fe how unbelievably scrumptious, hot, fresh, flavorful and authentic it was! They have a cool patio (great for people watching) and the interior is real-deal, soulful, vintage Santa Fe adobe! I ordered one of the pad Thai specials with shrimp (can’t recall name) and Kim had a chicken and vegetables stir fry with rice. In my pad Thai I instantly fell in love with the complex, sustained spiciness with earthy flavor notes graced by a surprising and welcomed subtle sweet finish. Kim’s chicken and vegetables stir fry was bathed in a light, luxurious brown-Smokey sauce from which leaped a gentle yet sparkling spiciness! Wife Kim, who has spent time in Thailand, told me it very much reminded her of what the very best Thai street food would taste like. The chef, who is originally from Thailand really has a Stravinsky-like command of flavors!“
