Bar ITO, located at the Fontainebleau, offers a range of dining experiences from quick bites to an elaborate omakase. Everything is very fresh, with fish and ingredients that are fresh and flavorful. The wagyu bowl is a favorite, featuring charred beef that melts in your mouth with perfectly seasoned sushi rice, though it is smaller than expected and more of a great snack than a full meal. Sushi rolls come in a fancy box, with the Hamachi noted as the best due to a little kick from the ginger. For a special occasion, the omakase experience includes 19 courses in a cool room with amazing views, tucked away through a private door for only 12 diners. Dishes like the Fuji salmon, Yellowfin tuna, Uni caviar, Otoro, Spanish mackerel, scallops, and Golden Eye snapper are highlights. The quality of the fish is so good, and the rice has a bit of citrus flavor. The service is quick, and the presentation is fabulous. While a touch pricey, the food is healthy, relatively cheap for Vegas, and reasonable considering its location.

A fast casual concept for sushi lovers. Sometimes they run out of items which sucks. Sometimes there’s a long line with only one cashier. The food however is fresh and consistently delicious. Located at the food hall, seating is available all around. Prices are high but everything on the strip is overpriced. The quality is there and I always leave satisfied. They do accept rewards if you gamble on property.
Had a great meal at Bar Ito with a great Japanese-inspired vibe. The food was delicious, and the service was friendly and attentive. A great place to relax, have some drinks, and enjoy a nice evening at Fontainebleau.
Bar ITO is a clean and convenient spot located on the second floor of the hotel, right inside the food court area.

The location makes it easy to stop by for a quick bite or drink without having to leave the property.

The overall atmosphere is modern and well maintained, and the food was decent, but the portions are quite small for the price. Considering the relatively high pricing, I expected a little more in terms of either portion size or something that really...read full review
