We loved our experience seeing the CIA as my BF from childhood went here. Bu I was a bit disappointed by the dinner. Most importantly, my BF arranged for prosecco and dessert for us but they never told us! We got 2 glasses of prosecco upon sitting down and just assumed CIA provided because I told them it was my GF's birthday. And we thanked them for it and left that in the comments! Then at the end we passed on dessert as we were pretty full but had no idea it had already been arranged! For starters both the pizza and the ap to follow came at the same time. The pizza was pretty cold but it was very good. The shrimp app was just OK. Then our Entrees came together and again mine was cold (and over salted as well and I love salt). I let them know and eventually the manager came over and asked if I wanted it reheated. Huh???? #1 The ravioli type pasta had hardened when cooled, not something that reheats and #2 I let them know it was over salted. How will reheating fix that? I askd them to make it again which took like 20 minutes so was not on a rush but it was delicious the second time. My GF had the pasta with clams, her standard favorite Italian and baseline dish, and it was simple but good. Only five tiny clams in the dish though. Cappuccino to finish was very good.

Saying all this, keep in mind this is a Training restaurant and these are students trying to learn so we were trying to be patient. Interact and ask them questions. Our main waiter Carlos was doing his best. We let him pick our wines for dinner and he did great. Still had a good time. But such a bummer that my BF went through some hoops to do something for us and they never even mentioned a word to us. They did take off the wine and cappuccino from the bill.

Just a gem. Prices are the same if not less than restaurants Ive been to recently but the service is simply outstanding! Food was delicious , service incredible and the atmosphere was out pf this world. Ive never been to Italy other than epcot in Disney world but this felt like we traveled much further than Dutchess County. Worth every penny.

We had lunch with extended family (a party of 11). The service was tremendous! Our server Hallie was professional, patient and courteous. The other students who served us food were also exceptional. We had never been here before, and our large group had high hopes. The food was delicious and exceeded our expectations. We tried 6 different appetizers - loved them all. The entrees we had were also tremendous. And the cheesecake dessert - oh my! We spent 3 hours enjoying the food, service, atmosphere and visiting with family. Would highly recommend!

I love eating at CIA. The food is great and even better is meeting the students who work there. I love their enthusiasm and passion for food. Our waiter walked me to the women’s bathroom when I walked where it was. Next level service. You feel like royalty. The menus rotate. I especially loved the pizza. The crust was perfect and had so much flavor. I asked and they said they fermented it for 4 days. Worth it. Highly recommend it as an experience.

I am from the NYC area and very experienced to fine dining in my home area and of course, traveling abroad and I always dine at the best-rated, acclaimed restaurants in the area I visit.

My visit at CIA began at The Egg for lunch and finished with Medici for dinner. I have always wanted to eat here and plan this visit about 6 weeks ago.

I arrived 10 mins before my reservation time and was seated promptly. Once seated the evening began a bordline lethargic dinner scene for my wife and I. My mental state entering CIA was one of I am about to enter food service at the highest standard. But as it took about 25 minutes to order then having to request bread for the table I began to rethink my expectations.

CIA is a training environment and not one I should have expected to have an elite level of professionalism. The restaurant had plenty of staff but very young staff at an age where their conversations, professionally or personally, dominated their time over service.

Once we did get service, it was polite but lacking in passion for the work. Once we received food, temperatures and technique where very good and flavors where very solid.

Having made overnight hotel reservations and traveled 2 hours to dine here, the experience was fine but maybe not worth the cost and time with so many options near me already.

Good luck to all the young staff as some did show they where capable of the job, and others showed more focus and maturity was needed to rise to the challenge of the food industry.

This is a teaching restaurant so you have to understand the process and take that into account. That said, the food was incredibly good as was the service also. It's a great restaurant and we'll worth the visit. Only one dish, the chicken, needed a touch more salt. We split 2 apps and 3 entrées an the superb cheesecake for dessert. Dont miss out on the exceptional focaccia and oil as well.

We had a great time celebrating my belated birthday lunch here. The food was amazing, just like at the other CIA restaurants. Our server, Sunny, was very welcoming and cheerful. The pizza appetizer was generous and one of the best we’ve had. The calamari tasted good, though the breading was a bit uneven.
I loved the tender lamb but wished for a little more ragu sauce. My husband’s chicken was moist and flavorful. For dessert, the yogurt with fresh fruits and the dark chocolate mousse were both delicious. Overall, highly recommended!
