We came across Tortilla at an event. They have a great selection of build-your-own options that the menu and the side of the truck walk you through. Base (such as tacos, bowls, burritos, quesadillas, and they even offer a Doritos based walking taco), Protein (multiple different types of meat, plus tofu), and Toppings (lots!), plus any sides you might want. Been to this truck a couple times. Had good, Chipotle-style burritos both times. What I didn't notice on my first visit was the churros on the menu. I was excited to see them frying them up while I waited. I gasped when I opened them. I nearly fainted at the first bite!
