Pho Anh Vu is a hidden gem of a restaurant that offers an efficient and well-oiled dining experience. The restaurant is relatively quick with food being served, and despite being constantly packed, customers never have to wait too long. The service is quick and friendly, and the place is designed so that diners can watch their pho being prepared by the chef.

The interior has a cool, spacious feel, with tables set up close together, allowing for eating beside strangers if necessary. The Gỏi cuốn (fresh spring rolls) with pork and shrimp, accompanied by the tuong cham (peanut butter sauce), were a decent size and fresh-tasting, although the meat filling was a bit sparse. The peanut sauce had a strong hoisin flavor, with the peanut butter taste coming mainly from the chunks of peanuts.

The standout dish, however, was the Pho Dac Biet (Special Rice Noodle Soup). Ordered in the large size, this soup was a true showstopper, with a rich, clear beef broth that seemed to sparkle with the perfect balance of fat and collagen. The noodles were cooked al dente, with a nice springy bounce. The generous portion included tripe, sausage, beef, and rare beef, and the fresh basil and sprouts added a beautiful presentation and flavor.

The restaurant has recently opened a new location in Vaughan, and according to one review, the service, food, and atmosphere are even better than the original North York location. Overall, Pho Anh Vu is a must-try, with a repeat-worthy dining experience.
