This is one of the best dining experiences I have ever had in Portland! The food was incredible- creative, fresh, delicious and diverse - and the warmth of the staff and attention to every detail just made the whole meal unforgettable. I am so happy that Republica continues to serve brunch, Portland is lucky to have this incredible treasure!

Republica offers a top-notch dining experience with warm service and delicious food, showcasing a journey through the history of Mexican culture. The ambiance is spacious and lively, with a pleasant atmosphere enriched by the team's passion for the craft, making it suitable for celebrating anniversaries or any special occasion. The snap pea cheesecake dessert remains a standout with fantastic textures. The restaurant has gained attention for its exquisite 7-course and 10-course tasting menus, with the latter priced reasonably at $150 per person. Guests appreciate the inclusion of gratuity, supporting fair wages for the staff.
The knowledgeable and friendly staff enhance the dining experience by educating guests about the background of each dish, making every meal an opportunity to learn and try new flavors. The open kitchen allows diners to watch chefs at work, adding to the overall experience. Many reviews highlight the exceptional service, with staff delivering dishes with warmth, kindness, and respect. Guests have noted that the hospitality is top-notch, and the food is described as incredible and novel in every way. Diners have praised the unique flavors and innovative combinations, mentioning dishes like tuna tartare and the grilled sea bass frijoles, which was cooked perfectly. Although some diners mention that the portion sizes can be small, the overall experience is characterized as food as art, history, and celebration. Republica remains a memorable spot in Portland, ideal for both small and large groups looking for an amazing adventure in Mexican cuisine.
