This is the Best and Very Authentic Restaurant that my Beijing-born Spouse and I have experienced up to this date. A Family-Operated restaurant featuring a tasty menu with random Specials that can be Robust or Ethereal, depending on the Dish. A meal here is like Going Home for Mama's delicious cooking (...especially if your Mother is/was an excellent Chef from Xi'an, the capital of the Chinese province of Shaanxi!!!). Taste of Changan is a cozy Chinese restaurant in the main line area that offers authentic dishes from Shaanxi province in northwestern China. The restaurant focuses on regional specialties such as noodles, dumplings, and breads, with no rice bowls on the menu. The star of the show is the hand-pulled noodles, made to order and can reach impressive lengths and widths. These noodles are served with superb, umami-laden, and spicy sauces that have a unique complexity.
The restaurant also serves excellent dumplings, made fresh in-house using a traditional technique called "one-squeeze" folding.
