“On Wednesday night I participated in my first porn shoot. Food porn that is. 😂.
Evaga Desert Kitchen (agave backwards) which is located behind The Elmont and adjacent to the water park in The Montecillo hosted a food tasting which turned out to be the biggest orgy of flavors in my 48yrs of life.
To start off I had the Compressed Watermelon topped with goat cheese and almonds. They take a large chunk of watermelon and compress it so as the remove the air and allow for a flesh that is both savory, and tremendously juicy. The goat cheese added a nice zesty and sour contrast to the sweetness of the watermelon. I didn’t know goats made cheese but they’ve replaced the memonitas as my favorite cheese makers.
Next up was the crab cakes. A mixture of potato and crab sautéed with arugula and topped with a delicious chipotle aioli. The cake was crunchy on the outside and tender, meaty and delicious on the inside. Definitely the kinda crabs you would be grateful to receive ❤️❤️❤️
And then came the entreès. First up the Arrachera served with broccolini, potato’s and carrots. If not prepared correctly skirt steak can be tough and chewy due to all the connective tissue. Well this particular steak was nothing of the sort. The Arrachera was soft and tender, taking only about two or three chews with eat chew bursting with flavor. Basically it’s a party in your mouth and nobody’s calling the cops this time. The veggies were good. But they’re sidekicks, they’re Robin to the Arracheras Batman. Enough said.
Next up was my absolute favorite. The Margarita Pizza. Yes the pizza was my favorite, and no I’m not a 12yr old child. I honestly do not eat a lot of pizza. If you look on my page you might only see one pizza review, EVER! . Pizza is just not my thing. But the Margarita was my favorite because of the incredibly fresh ingredients and how refreshing each bite was. The pizza consists of fresh mozzarella, fresh tomatoes, basil and a drizzled with a nice balsamic vinaigrette. Fresh ingredients are heavenly, and that’s truly what this pizza was. The fresh mozz was a perfect combination of saltiness, chewiness and flavor. The pizza was basically a caprese on a delicious thin crust. And I love caprese to by the way. The simplicity, freshness, and out of this world flavor are what made this pizza my absolute favorite dish of the night.
The Creation of Adam, The Mona Lisa, and Starry Night are all considered masterpieces by the artistic world. Well on Wednesday night Chef Freedom painted several masterpieces worthy of The Louvre. His energy and talent breathe a fresh air of excitement to El Paso’s foodie scene. Be sure to take advantage of his talents while he’s still here.
