We recently stayed for 3 weeks in Galveston and experienced several restaurants. The meal we had here was by far the best we had. Food was interesting and beautifully presented, and service was top notch without being stuffy. We had 2 fish dishes, delicious creamed corn, split a wedge salad and the chocolate dome dessert. Too much food, to be honest. But a wonderful experience.

Second try for this one after a horrendous experience a year ago. Still not much better. We won't be back. Lobster deviled eggs. I imagine lobster meat being incorporated into the deviled egg. No, just a small piece of fried lobster stuck into a completely unseasoned and flavorless deviled egg. Creamed corn is not creamed corn. It is corn in an overpowering cheese sauce. Can't taste corn or the poblano peppers, just Parmesan. All fish dishes have a cream sauce. Fresh fish should be done simply. You don't need a sauce. Only one locally sourced fish on the menu. So, we ordered steaks. The server asks if we want to add a sauce to the steak. Again, like the fish, a good steak doesn't need a sauce. Both steaks were the wrong temperature. Sent one back. Remake was good. Ordered an Elmer T Lee bourbon. $27. The server tells me I'm lucky because it's the last pour. It barely covered the bottom of the glass. Might have been a half ounce. What luck!! My wife ordered a glass of Cab. There was a bug or piece of cork floating in it. Just sloppy! Reservation stated that we were there for my wife's birthday. We ordered dessert and half way through it, they bring out the birthday complimentary dessert. Again, very sloppy. They comped the wine and the cheesy corn, but it's about the experience. Also, if creamed corn has cheese in it, you need to note it on the menu. It could make someone sick. Their grilled asparagus is one of the best I have ever had. That doesn't save the dinner or the experience.

The food and service were excellent. Our server, Nickie, was superb. Mild irritation with phone call confirmation of our reservation after I had already replied to open table confirmation email and notification of Vargas dress code requirement when we've been there before and are aware of appropriate dress.

Once again, I experienced it Vargas was 2nd to none The food was excellent. I had the Aji tuna my wife had the scallops. Anthony was our server he was top-notch couldn't get any better Very attentive and pleasing for us We will be returning Great food great service great place

Our server, Erica, is a 5 star server. She was a delight, very knowledgeable and enhanced our experience. The food quality was very good, as expected. Seeing Paco is always a treat. Vargas is our go to for special occasions.

R.J.'s service was attentive, welcoming, warm, and helpful. The bone marrow appetizer was delicious and the lamb lollipops were expertly prepared, both of which paired wonderfully with the Bravium Pinot Noir. The plantain-encrusted Chilean sea bass with Raspberry-Jalapeño sauce was fresh, bright, moist, and incredibly flavorful, pairing delightfully with their Reisling. We finished the evening with a slice of cheesecake. A genuine top shelf meal, and an experience worth trying.

Great food. Service was a bit slow. Atmosphere is great. Prices can be prohibitive.Parking: No attendant and machine charged more ($25) than advertised ($10). No way to correct because no one answers the phone. Left a message and they never replied.

We went for my birthday. We loved the food, drinks and ambience of the restaurant! I love that they have a dress code and especially enjoyed the timeliness of the way they deliver food to the table. We ordered steak filet, lobster deviled eggs, chopped salad, lobster bisque, Chilean Sea Bass , Scallops and the lobster Mac & cheese. Bread pudding for dessert did not disappoint! Special occasion restaurant and worth it!
