An incredible and unexpected Honduran food truck experience!
The lady taking our order was so nice, spoke great English, and gave us perfect recommendations.
At her suggestion, I ordered the Pollo con Tajadas. It was a phenomenal fried chicken dish—lightly sauced and served over a bed of fresh fried thin plantains, crisp julienned cabbage, and incredible pickled onions. The portion was massive!

HOLY PEAK this is the best food I've ever had!!! It totally blew away any of my expectations! The owner is also incredible! (It's now a food truck so when you pull up the location and it's like an field that's why)

Sabor catracho Kahlo Tacos Bistro is a food truck in Waco with an incredible and unexpected Honduran food experience. The owner is exceptionally kind, proud of her Honduran culture, and shares a lovely passion for Texas. The lady taking orders is so nice, speaks great English, and gives perfect recommendations. The Pollo con Tajadas is a phenomenal fried chicken dish—lightly sauced and served over a bed of fresh fried thin plantains, crisp julienned cabbage, and incredible pickled onions. The portion is massive. The Tacos Hondureños are huge, delicious, and loved with zero regrets. The Honduran Horchata is a fantastic new experience, made with ground seeds and nuts, giving it a unique, delicious flavor profile. The quesabirria tacos are the absolute best. The coconut matcha is recommended. The server is attentive and so sweet, even offering to make Mickey Mouse shaped pancakes for kids. This little Eatery is off the beaten path, peaceful, and full of authentic flavors. The food has Honduras character and great flavor. The customer service is outstanding. Semi truck park is available on public street enough next to the Kahlo Tacos Bistro.
