Moist Brisket
Moist brisket is seasoned with our Rudy's Rub and smoked slow overnight. Moist is marbled with fat.
Half Jalapeño Cheddar Sausage
Half of our German sausage link consisting of half beef and half pork with spices, jalapeños, and cheddar cheese added to it. A half sausage is cut into 2 pieces and weighs about a quarter pound.
Half Chicken
A 3 pound chicken, rubbed with salad dressing and seasoned with Rudy's Rub which is then smoked for approximately 1½ hours. Served on the bone with each half cut into four pieces.
Brisket
Brisket is seasoned with our Rudy's Rub and smoked slow overnight.
Turkey
Turkey Breast is rubbed with salad dressing, seasoned with a rosemary sage spice and smoked for approximately 1½ hours.
Pork Ribs
About 4-6 Ribs per pound. Also known as spare ribs, which will have a little marbling on them. They are seasoned with Rudy's Rub and smoked for approximately 1½ hours.
Smoked Potato
A full pound potato seasoned with Rudy's Rub, smoked, and served with your choice of whipped butter, sour cream, and cheese. You can add 3.0 oz. sliced or chopped meat for $4.
Whole Regular Sausage
A whole German sausage link consisting of half beef and half pork. A whole sausage is cut into 4 pieces and weighs about half a pound.
Two Meat Smoked Potato
A full pound potato seasoned with Rudy's Rub, smoked, and served with your choice of two meats, whipped butter, sour cream, and cheese.
Baby Back Ribs
About 6-8 Ribs per pound. Small and very lean pork ribs, seasoned with Rudy's Rub and smoked for approximately 1 hour.

Whole Jalapeño Cheddar Sausage

Pork Loin
Same cut as pork chops, but without the bone. Seasoned with Rudy's Rub and smoked for approximately 1½ hours. Served thinly sliced.
1/2 lb Pulled Pork
Shredded pork that has been smoked and mixed with our tangy Mustard Au Jus sauce.

Our sandwiches come with approximately 1/3 pound of the meat of your choice and a buttered and toasted bun.

Fresh, whole-kernel corn with heavy cream, Parmesan cheese, sugar and other special seasonings – made in-house from scratch.
Potato Salad
Potatoes, egg, celery, and onion, mixed with mayonnaise and mustard.
Cole Slaw
Chopped green cabbage, and carrots, mixed with a sweet creamy slaw dressing.
New Potatoes
Red potatoes boiled in salt water and served with or without melted butter.
Green Chile Stew
Hot and flavorful chicken base stew consisting of mild green chiles, onions, potatoes, carrots, tomatoes, chopped brisket, and special seasonings – not very spicy.
Three Bean Salad
A mixture of green, kidney and Garbanzo beans in a sweet relish dressing.
Chips
Small bag of chips of your choice.
Rudy's Beans
Rudy's Beans are spicy pinto beans cooked with chopped brisket, Rudy's Original BBQ "Sause," and Rudy's Rub.

Rudy's is consistently good Texas BBQ. It's comfort food BBQ - quick, easy, and reasonably priced. I've been frequenting Rudy's for years as a comfortable place to have meaningful conversations with other men specifically. You can wear athletic clothes or work clothes and not feel out of place. You can visit with someone for an hour or work there on wifi all day. Rudy's is great at what it is trying to be. Catering is easy. Dinner can get pricey, but breakfast...

I've been in here twice now, once for breakfast, once for a late lunch. I had brisket in my breakfast taco and in a sandwich. Both times the brisket received was mostly bark (dry and stringy). I will give it one more shot and be sure to get slices as maybe I'm receiving poorer quality trimmings. Service has been top notch each time and I love the sides and atmosphere.
