Hit The Roast Cafe is a must stop for locals and travelers passing through Vernal. The atmosphere is comfy, fun, and awesome, with gorgeous art works on the walls from local artists, books in the back, and even live music. The shop is huge, with a ton of space to work or gather in the backroom. The coffee is exceptional; the cold brew is hands down the best, and the Mocha and Iced Matcha with strawberry foam are highly recommended. Specific meals like the Highway 191, Highway to Heck, breakfast sandwich, breakfast bagel with cream cheese, and biscuits and gravy are all delicious, with the gravy being a personal favorite. The service is wonderful, with friendly staff checking in without being annoying.
