For me, there's an elegance to simplicity when it's done well. The food here is not pretentious or pretending to be something it's not (I also happen to love noodles so there could be bias there). It is delicious, prepared well and full of flavor. We ordered more than we needed on purpose but instead of taking some home, we stuffed ourselves.
